I made cookie tree decorations last year, but can’t find that recipe (are we getting a firm idea of my organisational skills yet?) so I raided my numerous recipe books and found this one:
It was in the Primrose Bakery book which also has a brilliant granola recipe (I’d put a hyperlink in here, but still got internet issues, grrr). For now though, I’ll give you their gingerbread recipe:
- 75g soft dark brown sugar
- 50g golden syrup
- 25g black treacle/molasses
- 1tsp cinnamon
- 1tsp ginger
- Pinch of cloves
- Pinch of ground nutmeg
- Rind of half an orange
- 95g unsalted butter
- 225g plain flour
- 1/2tsp bicarbonate of soda
- Royal or water icing for decorating
- Put the sugar, syrup, treacle, spices & orange rind into a heavy-based saucepan over a high heat until the sugar dissolves.
- Remove from the heat & stir in the butter until completely melted.
- Stir in the sifted flour and bicarbonate until a soft dough is formed.
- Wrap the dough in clingfilm and refrigerate the dough for at least 1hr.
- Preheat the oven to 180C/gas mark 4 & line 1-2 baking trays.
- Roll out the dough on a floured surface to around 2mm thick.
- Carefully cut out whatever shapes you like, remembering to make a hole for hanging ribbon, & place them on the baking trays with a little space in between.
- Bake for 8-10min until the centre is stiff but not firm & the edges aren’t too dark.
- Allow the biscuits to cool completely before icing, then let the icing set.
- Your biscuits are now ready to decorate your tree.
